Alberta Barley - a hearty, healthy choice!

Self ~ Saucing Chocolate Pudding

whole grain barley flour
cocoa
baking powder

250 mL
45 mL
10 mL
 1/4 tsp
3/4 cup
1/2 cup
1 tsp
2 Tbsp
1/2 cup
 
salt
white or light brown sugar
milk
vanilla
butter, melted
chopped nuts (optional)
1 mL
175 mL
125 mL
5 mL
30 mL
125 mL
Sauce
1 cup
1/4 cup
2 cups
light or dark brown sugar
cocoa
boiling water
250 mL
50 mL
500 mL

In a medium bowl, mix together first five ingredients.  Beat in milk, vanilla and butter, then stir in nuts.  Turn batter into a greased 1.5 litre casserole dish.

In a small bowl, mix together the first two sauce ingredients and sprinkle over batter.  Pour 2 cups boiling water over top.

Bake at 325° F (160° C) for 50 - 60 minutes, or  until toothpick inserted comes out clean.  Serve warm.   Makes 4-6 servings.
