Alberta Barley - a hearty, healthy choice!

Saskatoon/Rhubarb Dessert


1/3 cup

butter or margarine
granulated sugar
eggs
barley flour
all-purpose flour
baking powder
salt
saskatoon berries
rhubarb
milk (+- to obtain desired consistency

            Topping

1/2 cup
3/4 cup
1 1/2 tsp
1/3 cup

sugar
flour
cinnamon
butter or margarine

Cream butter and sugar together then add eggs and beat.  Stir dry ingredients into creamed butter mixture and then add milk.  Mix well and pour into greased 10" x 13" baking dish.  Sprinkle saskatoon berries and rhubarb over batter.

In a separate bowl, combine topping ingredients and spread over the top.  Bake at 350º F for 40 to 45 minutes.   Serve warm with ice cream.
