Alberta Barley - a hearty, healthy choice!

Barley and Wheat Pie Crust
Measuring carefully is the key to this lovely pie crust. The lecithin may be purchased at health food stores.

water
oil
liquid lecithin (optional)

125 mL

1 cup

whole barley flour
all purpose flour
pinch of salt
250 mL
250 mL

Mix water and oil together in a blender and add lecithin. In a large bowl, measure the flour and salt, and add the liquid. Stir and then quickly knead the dough. Shape into a ball and allow to sit for five minutes. Then roll out the dough, adding flour if necessary. Use like any pie crust in pies and tarts.
