In
a large bowl, beat sugar, eggs, vanilla and oil for 4 minutes. In another bowl, combine
barley flour, cocoa, baking powder, baking soda and salt. Mix dry ingredients into liquid
mixture alternately with boiling water, starting with dry ingredients. Beat until smooth.
Pour into greased 9 x 13 pan (3 L). Bake at 350° F (180° C) for 45 minutes or until
centre springs back when lightly touched. Cool, then frost with favourite icing.
