Saskatoon Rhubarb Dessert
Ingredients
- 1/3 cup butter or margarine
- 3/4 cup granulated sugar
- 2 eggs
- 3/4 cup barley flour
- 3/4 cup all-purpose flour
- 4 1/2 tsp baking powder
- 3/4 tsp salt
- 4 cups saskatoon berries
- 1 cup rhubarb
- 3/4 cup milk (to obtain desired consistency)
- 1/2 cup sugar
- 3/4 cup flour
- 1 1/2 tsp cinnamon
- 1/3 cup butter or margarine
Directions
- Cream butter and sugar together then add eggs and beat.
- Stir dry ingredients into creamed butter mixture and then add milk.
- Mix well and pour into greased 10" x 13" baking dish.
- Sprinkle saskatoon berries and rhubarb over batter.
- In a separate bowl, combine topping ingredients and spread over the top.
- Bake at 350F for 40 to 45 minutes.
- Serve warm with ice cream.
