Golden Granola

Recipe courtesy of the Oat and Barley Council of Ontario.

Ingredients

  • 1 cup maple syrup
  • 1/4 cup canola oil
  • 1 tbsp vanilla extract
  • 1 cup barley flakes
  • 2 cups rolled oats
  • 1 tsp cinnamon
  • 1/2 raw, unsalted pumpkin seeds or sunflower seeds
  • 1/2 cup unsweetened shredded coconut
  • 1 cup almonds or pecans, coarsley chopped
  • 1/2 cup currants
  • 1/2 cup chopped dried apricots

Directions

  1. Preheat oven to 250F
  2. Place rack in the middle of the oven
  3. In a small sauscepan, stir the syrup and oil with a whisk over lowe for 5 minutes, stirring often
  4. Add vanilla
  5. In a large bowl, toss the flakes, oats, cinnamon, pumpkin seeds, cocnut and nuts
  6. Add the syrup mixture
  7. Stir until dry ingredients are evenly coated
  8. Spread the mixture onto a large non stick or parchment lined rimmed backing sheet - 13"x9"
  9. Bake for 70 minutes (1 hour and 10 minutes), stirring the mixture every 15 minutes and rotate the baking sheet
  10. When cool, add currents and apricots

Cover and store at room temperature for 2 weeks, refrigerate for 2 months.
