Good Morning Muffins

Ingredients

  • 5 cups wheat bran
  • 5 cups buttermilk
  • 1 cup brown sugar, packed firmly
  • 1 cup canola oil
  • 4 eggs
  • 1 cup blackstrap molasses
  • 1 1/2 cups water
  • 5 cups whole barley flour
  • 2 cups raisins
  • 1 cup wheat germ
  • 1 Tbsp salt
  • 4 tsp baking powder
  • 4 tsp baking soda1 tsp cinnamon

Directions

  1. In a very large bowl, stir together the bran and buttermilk. 
  2. Mix sugar, oil, and eggs and add to buttermilk mixture. 
  3. Add molasses and water. In another bowl, stir together barley flour, raisins, wheat germ, salt, baking powder, baking soda, and cinnamon. 
  4. Add to the buttermilk mixture and stir just until dry ingredients are moistened. 
  5. Fill paper muffin cups to top edge and bake in a 375F (190C) oven for about 20 minutes. 

Makes 36 muffins.
