Cranberry Muffins

Ingredients

  • 2 cups whole barley flour
  • 3/4 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3/4 cup chopped pecan
  • 1 egg
  • 1/4 cup canola oil
  • 2 tsp grated orange peel
  • 3/4 cup orange juice
  • 1 1/2 cups chopped cranberries, fresh or frozen, thawed

Directions

  1. Combine flour, sugar, baking powder and soda, salt and pecans in a large bowl. 
  2. In a separate bowl, stir wet ingredients together. 
  3. Add to dry ingredients and stir to moisten. 
  4. Fill greased medium muffin cups at least 3/4 full. 
  5. Bake at 375F (190C) for 25 to 30 minutes.
