Cranberry Muffins
Ingredients

2 cups whole barley flour

3/4 cup sugar

1 1/2 tsp baking powder

1/2 tsp baking soda

1 tsp salt
-
3/4 cup chopped pecan
-
1 egg
-
1/4 cup canola oil
-
2 tsp grated orange peel
-
3/4 cup orange juice
-
1 1/2 cups chopped cranberries, fresh or frozen, thawed
Directions

Combine flour, sugar, baking powder and soda, salt and pecans in a large bowl.

In a separate bowl, stir wet ingredients together.

Add to dry ingredients and stir to moisten.

Fill greased medium muffin cups at least 3/4 full.

Bake at 375F (190C) for 25 to 30 minutes.
