Blueberry Muffins

Ingredients

  • 2 cups whole barley flour
  • 1/2 cup granulated sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 eggs 
  • 1/4 cup canola oil
  • 1 cup milk
  • 1 cup fresh or fzn. blueberries

Directions

  1. In a large bowl, combine barley flour, sugar, baking powder, salt and cinnamon. 
  2. In a smaller bowl, beat eggs. 
  3. Mix in oil and milk. 
  4. Pour wet mixture into the flour mixture and stir until well combined. 
  5. Stir in the blueberries. 
  6. Fill 12, greased or paper-lined muffin cups almost full. 
  7. Bake at 400F (200C) for 18 minutes or until centre springs back when lightly touched. 
  8. Let cool for 10 minutes before removing from the pan.
