Blueberry Muffins
Ingredients

2 cups whole barley flour

1/2 cup granulated sugar

4 tsp baking powder

1/2 tsp salt
-
1/2 tsp cinnamon
-
2 eggs
-
1/4 cup canola oil
-
1 cup milk
-
1 cup fresh or fzn. blueberries
Directions

In a large bowl, combine barley flour, sugar, baking powder, salt and cinnamon.

In a smaller bowl, beat eggs.

Mix in oil and milk.

Pour wet mixture into the flour mixture and stir until well combined.

Stir in the blueberries.

Fill 12, greased or paper-lined muffin cups almost full.

Bake at 400F (200C) for 18 minutes or until centre springs back when lightly touched.

Let cool for 10 minutes before removing from the pan.
