Quick Barley Water
Ingredients

1/4 cup pearl barley
-
2 - 3 lumps of sugar

1 tsp lumps of sugar

2 cups boiling water
-
pinch salt
-
zest of 1 small lemon
Directions
-
Put the pearl barley in a saucepan and cover with water.

Bring to a boil and boil for 2 minutes.

Strain.

Add the sugar, salt, lemon zest, juice and boiling water to the barley and pour into a jug.

Cover and leave until cooled.

Chill.
-
Strain before using.
Serves 3 to 4.
