Put
the pearl barley in a saucepan and cover with water. Bring to a boil and boil for 2
minutes. Strain. Add the sugar, salt, lemon zest, juice and boiling water to the barley
and pour into a jug. Cover and leave until cooled. Chill. Strain before using. Serves 3 to
4.
