Alberta Barley - a hearty, healthy choice!
Quick Barley Water

1/4 cup
2 - 3
1 tsp
2 cups
pearl barley
lumps of sugar
lemon juice (optional)
boiling water
small pinch of salt
zest of 1 small lemon
50 mL
2 - 3
5 mL
500 mL

Put the pearl barley in a saucepan and cover with water. Bring to a boil and boil for 2 minutes. Strain. Add the sugar, salt, lemon zest, juice and boiling water to the barley and pour into a jug. Cover and leave until cooled. Chill. Strain before using. Serves 3 to 4.
