Alberta Barley - a hearty, healthy choice!

Barley with Fruit and Nuts

A nice change from oatmeal or cereal . . .

1/2 cup
1cup
1/4 cup
1/2 tsp
2 cups


pearl barley
raisins
dried cranberries
salt
water
zest of 2 lemons,or
1/2 tsp lemon oil, or
2 Tbsp lemon juice
125 mL
250 mL
50 mL
2 mL
500 mL
1/4 cup sliced almonds, toasted 50 mL
Put first five ingredients into a medium saucepan and bring to a boil.  Simmer on low heat with the lid on for about 45 minutes, or until most of the water is absorbed and the barley is cooked.

Remove from heat and add lemon zest or oil or juice, as well as almonds.  Can be served warm or cold.   Makes 4 servings.
