Alberta Barley - a hearty, healthy choice!

Mushroom Pot Barley Casserole

1/2 lb fresh mushrooms (can substitute canned) 250 g

1/4 cup
1 cup
large onion chopped
butter
pot barley

50 mL
250 mL
4 cups chicken stock, or
4 tsp chicken oxo and 4 c. water
1 L
1/2 tsp
1/8 tsp
salt
pepper
2 mL
1/2 mL

Sauté mushrooms, onions, and barley in melted butter.   Place in casserole dish and add remaining ingredients.  Mix well.  Bake covered for one and a half hours at 350° F (180° C).  Remove lid for last 20 minutes.
