Alberta Barley -
a hearty, healthy choice!
Mushroom Pot Barley Casserole

mushrooms (can substitute canned) |

butter
pot barley

chicken
stock, or
4 tsp chicken oxo and 4 c. water

Sauté mushrooms, onions, and barley in melted butter.
Place in casserole dish and add remaining ingredients. Mix well. Bake covered
for one and a half hours at 350° F (180° C). Remove lid for last 20 minutes.
