Alberta Barley - a hearty, healthy choice!

Barley and Beef Mulligan

Ground beef
chopped green pepper, medium
chopped onion, medium
chopped garlic cloves
whole tomatoes (540 mL)
beef broth
salt
black pepper
brown sugar, firmly packed
vinegar
Whole kernel corn (optional)
pot barley or hulless barley

Soak barley overnight, drain.  Lightly brown the ground beef.  Add green pepper, onion, and garlic and saute lightly.  Stir in drained barley and put in slow cooker.  Add remaining ingredients and mix together.  Cook on high for 3 to 4 hours until barley is soft and chewy.
