Slow Cooker Chicken Barley Chili
Ingredients
- 1 pound boneless, skinless check breast halves or thighs, cut into 1/2 inch pieces
- 1 can pinto beans, rinsed and drained
- 1 can corn
- 1 cup pearled barley
- 1-2 tbsp chili powder, to taste
- 1 tsp ground cumin
- 6 cups water
- 1 can diced tomatoes, undrained
- 1 jar mild or medium store brand salsa
- Salt and freshly ground pepper to taste
Directions
Combine all ingredients in the slow cooker. Stir to combine. Cover and cook on low for 6-8 hours or on high for 4-6 hours. Taste and season with salt and pepper, as needed.
