Barley Waffles

Ingredients

  • 2 eggs
  • 1 3/4 cups milk
  • 1/2 cup canola oil
  • 2 cups whole grain barley flour
  • 4 tsp baking powder
  • 1 Tbsp sugar

Directions

  1. Beat eggs by hand until fluffy then add remaining ingredients and beat until smooth. 
  2. Pour batter onto heated, lightly greased waffle iron and cook until light brown (about 5 minutes).
  3. I add 1/2 cup of raisins in the mix, but you can add anything from ham, berries, apple, banana etc. to increase the flavor and nutrition.
