The Different Cookie


Ingredients

  • 1 cup margarine
  • 2/3 cup brown (demerara) sugar
  • 2/3 cup white sugar
  • 2 eggs
  • 1 tsp almond extract
  • 1 1/4 cup whole barley flour
  • 1 cup whole wheat flour
  • 1 1/2 cup oatmeal
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup chopped pecans

Directions

  1. Blend margarine and sugar together well, and then beat in eggs and almond extract. 
  2. Add all the dry ingredients, and mix well. 
  3. Roll into balls and place on a lightly greased cookie sheet. 
  4. Flatten slightly with the base of a glass, and bake at 350F (180C) for 10 to 12 minutes. 
Makes about 4 dozen cookies.
