The Different Cookie
Ingredients
- 1 cup margarine
- 2/3 cup brown (demerara) sugar
- 2/3 cup white sugar
- 2 eggs
- 1 tsp almond extract
- 1 1/4 cup whole barley flour
- 1 cup whole wheat flour
- 1 1/2 cup oatmeal
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1/2 cup chopped pecans
Directions
- Blend margarine and sugar together well, and then beat in eggs and almond extract.
- Add all the dry ingredients, and mix well.
- Roll into balls and place on a lightly greased cookie sheet.
- Flatten slightly with the base of a glass, and bake at 350F (180C) for 10 to 12 minutes.
Makes about 4 dozen cookies.
