Alberta Barley - a hearty, healthy choice!

Spiced Oatmeal Cookies

brown sugar
white sugar

vanilla

1/2 tsp
barley flour
baking soda
salt
rolled oats (or barley flakes)
nutmeg
cinnamon
500 mL
7 mL
3 mL
750 mL
5 mL
2 mL

Glaze:
4 cups
1 tsp
1/2 tsp
4 Tbsp

icing sugar
vanilla
almond flavouring
light cream
finely chopped pecans
fine coconut

Combine all ingredients and mix well. Drop by spoonfuls onto a baking sheet. Bake at 425°F (220°C) until lightly browned, about 10 minutes. Remove from oven and cool on pan for 10 minutes then remove to cooling rack.

To make glaze, mix together icing sugar, flavourings and cream. When cookies are cool, glaze then sprinkle with pecans and coconut. Makes about 5 dozen.
