Alberta Barley - a hearty, healthy choice!

Quick Barley Raisin Cookies

white sugar
baking soda

barley flakes OR
rolled or quick oats
whole barley flour
raisins
water

Cream together butter, sugars, soda, salt, spices and vanilla, then beat in egg. Stir in remaining ingredients. These cookies spread a bit during baking, so space dough two inches apart on a greased cookie sheet. Bake for 10 to 12 minutes in a 350° F (180° C) oven. Makes about three dozen cookies.
