Great Pumpkin Cookies

or margarine, soften
packed brown sugar
egg, slightly beaten
vanilla
pumpkin (canned or fresh)
chocolate chips, or
orange flavoured chips |

Combine flour, oats, soda, cinnamon and salt. In a separate
bowl, cream margarine. Add sugars gradually, beating until light and fluffy. Add egg and
vanilla, mix well. Alternate additions of dry ingredients and pumpkin, mixing well after
each addition. Stir in chips and raisins. Drop heaping teaspoons on lightly greased cookie
sheet. Bake for about 12 minutes at 375° F (190° C). Remove from sheets, cool on rack.
Makes about 4 dozen.
