| In a large bowl, cream butter and sugar. Beat in eggs, baking
soda, salt and vanilla. Stir in barley flour, then chocolate chips and nuts, if desired.
Drop by spoonfuls onto ungreased cookie sheet. Bake at 375° F (190° C) for 10 minutes,
or until lightly browned. Remove cookies from cookie sheet after they have cooled for a
few minutes.
Makes about 4 dozen cookies. This
recipe can be doubled with excellent results.
