Oat and Barley Banana Bread

Ingredients

  • 1 cup barley flour
  • 1/2 cup oat flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 3 tbsp canola oil
  • 1/4 cup applesauce
  • 3 ripe banans (blended with a fork or you can puree if you like)
  • 1/4 cup butter/margarine, melted
  • 1 1/4 cups sugar
  • 1 tsp vanilla

Directions

  1. Preheat oven to 350 F.
  2. Prepare loaf pan with light coating of cooking spray, or line with parchment paper.
  3. In a medium sized bowl, combine all dry ingredients.
  4. Set aside.
  5. In another bowl, mash bananas until soft.
  6. Combine all wet ingredients with the bananas.
  7. Add to dry ingredients and stir until mixture is lumpy but barely blended.
  8. Pour batter into loaf pans.
  9. Bake for 50 to 55 minutes or until cracked and golden brown on top.
  10. Remove from oven and set on wire rack cool.
