Welsh Cakes

Ingredients

  • 1 cup whole barley flour
  • 2 cups all purpose flour
  • 1 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/4 tsp salt
  • 1 tsp nutmeg
  • 1 cup shortening
  • 2 eggs
  • 1/2 cup milk
  • 1 cup currants

Directions

  1. Mix dry ingredients together, cutting in shortening until it is in pea size pieces or smaller. 
  2. Beat eggs and milk together and add to flour mixture. Add currants and mix well.
  3. Divide dough into 4 portions, and roll out one portion at a time on a floured board to 1/4" (6 mm) thickness. 
  4. Use a cookie cutter to cut in rounds. 
  5. Cook on a hot griddle to brown on each side. 
  6. Store in an airtight container.
