Fallen Angel Cake

Ingredients

  • 12 fresh egg whites (1 3/4 cups)
  • 1/2 tsp salt
  • 1 1/2 tsp cream of tartar
  • 1 1/2 cups granulated sugar
  • 1 tsp vanilla
  • 3/4 cup whole grain barley flour
  • 1/2 tsp almond extract

Directions

  1. With the egg whites at room temperature, add salt and beat until frothy. 
  2. Add cream of tartar and continue to beat until bubbles are small and white but still shiny. 
  3. Turn the beater to low speed and add half the sugar. Sift the other half of the sugar with the flour and add to the mixture slowly. 
  4. Add vanilla and almond extract and bake in an 8 x 13" pan for 30 minutes at 375F. 
  5. Allow to cool. 

Cake height will be about 2".
