Easy Barley Pudding & Barley Water

Ingredients

Barley Water 
  • 1/2 cup pearl barley
  • 8 cups water
  • 1/4 cup lemon juice
  • 4 tsp sugar or honey
Pudding
  • 1 carton cooked vanilla pudding mix
  • 3 cups milk for pudding mix
  • 2 1/4 cup cooked barley, set aside from barley water
  • 1 can mandarin orange segments

Directions

Barley Water: 

  1. Bring water and barley to a boil in a large pot. 
  2. Lower heat and cover. 
  3. Simmer very gently for about two hours. 
  4. Strain barley into a container and set liquid aside. 

Expect to have about 2 cups of barley and 5 cups of barley water. 

  1. Cool slightly, then add lemon juice and sweetener, to taste.
  2.  Serve chilled or as hot drink. 

Makes 5 servings. 

Variations: 

  1. Add fruit juices such as orange or cranberry to barley water.

Barley Pudding: 

  1. Add milk to pudding mix and cook in a saucepan according to package directions. 
  2. When done, stir in cooked barley. 
  3. Drain juice from can and add orange segments to barley pudding. 

Serve warm or chilled. Makes 5 servings. 

Variations: Substitute your choice of fresh fruits in lieu of the orange segments in the pudding, and try other pudding flavours such as banana or butterscotch.
