Cocoa Oat Bars with Barley Flakes

Ingredients

  • 1 cup barley flakes
  • 1/2 cup oat flakes
  • 2 tbsp dried shredded coconut
  • 3 cups rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1 1/4 cups unsalted butter
  • 3 tbsp corn syrup
  • 1 tsp vanilla
  • 1 1/2 cups soft brown sugar

Directions

  1. Preheat oven to 300F
  2. In a large bowl, combine barley and oat flakes, coconut, rolled oats and cocoa
  3. Melt butter, syrup, vanilla and sugar in a medium sized saucepan
  4. Stir until sugar dissolves - do not allow bubbles to form
  5. Pour butter mixture over barley-oat mixture
  6. Combine well
  7. Using a fork, press mixture evenly into a lightly greased or parchment paper lined pyrex dish, 9"x13"
  8. Bake for 20 minutes
  9. Allow to cool for 15 minutes
  10. Slice into 15-20 pieces
