Chocolate Pudding
Ingredients

1 cup whole grain barley flour

3 Tbsp cocoa
-
2 tsp baking powder
-
1/4 tsp salt
-
3/4 cup white or light brown sugar

1/2 cup milk
-
1 tsp vanilla
-
2 Tbsp butter, melted
-
1/2 cup chopped nuts (optional)
Sauce:
-
1 cup light or dark brown sugar
-
1/4 cup cocoa
-
2 cups boiling water
Directions

In a medium bowl, mix together first five ingredients.

Beat in milk, vanilla and butter, and then stir in nuts.

Turn batter into a greased 1.5 liter casserole dish.

In a small bowl, mix together the first two sauce ingredients and sprinkle over batter.

Pour 2 cups boiling water over top.

Bake at 325F (160C) for 50 - 60 minutes, or until toothpick inserted comes out clean.

Serve warm.
