Chocolate Pudding

Ingredients

  • 1 cup whole grain barley flour
  • 3 Tbsp cocoa
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup white or light brown sugar
  • 1/2 cup milk
  • 1 tsp vanilla
  • 2 Tbsp butter, melted
  • 1/2 cup chopped nuts (optional)
Sauce:
  • 1 cup light or dark brown sugar
  • 1/4 cup cocoa
  • 2 cups boiling water

Directions

  1. In a medium bowl, mix together first five ingredients. 
  2. Beat in milk, vanilla and butter, and then stir in nuts. 
  3. Turn batter into a greased 1.5 liter casserole dish.
  4. In a small bowl, mix together the first two sauce ingredients and sprinkle over batter. 
  5. Pour 2 cups boiling water over top.
  6. Bake at 325F (160C) for 50 - 60 minutes, or until toothpick inserted comes out clean. 
  7. Serve warm.
