Barley and Beef Mulligan

Ingredients

  • 1 1/2 lbs Ground beef
  • 1 chopped green pepper, medium
  • 1 chopped onion, medium
  • 3-4 chopped garlic cloves
  • 1 can whole tomatoes (540 mL)
  • 1 can beef broth
  • 2 tsp salt
  • 1/4 tsp black pepper
  • 1 Tbsp brown sugar, firmly packed
  • 1 Tbsp vinegar
  • 1 cup whole kernel corn (optional)
  • 1 cup pot barley or hulless barley

Directions

  1. Soak barley overnight, drain. 
  2. Lightly brown the ground beef. 
  3. Add green pepper, onion, and garlic and saute lightly. 
  4. Stir in drained barley and put in slow cooker. 
  5. Add remaining ingredients and mix together. 
  6. Cook on high for 3 to 4 hours until barley is soft and chewy.
