Hawaiian Barley Salad
Ingredients

2 cups pot (or pearl) barley

8 oz pkg cream cheese
-
1 pkg instant banana or vanilla pudding powder mix

19 oz can crush pineapple with juice or

19 oz can pineapple chunks drain juice

1 1/2 cups whipping cream icing sugar, vanilla, fresh fruit
Directions

Cook barley in about 7 cups of water until tender.

Drain and chill.

Beat the cream cheese with the pudding powder, then add crushed pineapple.

Whip the cream, and add a bit of icing sugar and vanilla to stiffen it.

Add whipped cream to the cream cheese mixture.
-
Fold with fruit such as banana & kiwi if desired.
Serves 8 -10.
