Hawaiian Barley Salad

Ingredients

  • 2 cups pot (or pearl) barley
  • 8 oz pkg cream cheese
  • 1 pkg instant banana or vanilla pudding powder mix
  • 19 oz can crush pineapple with juice or
  • 19 oz can pineapple chunks drain juice
  • 1 1/2 cups whipping cream icing sugar, vanilla, fresh fruit

Directions

  1. Cook barley in about 7 cups of water until tender.
  2. Drain and chill.
  3. Beat the cream cheese with the pudding powder, then add crushed pineapple.
  4. Whip the cream, and add a bit of icing sugar and vanilla to stiffen it.
  5. Add whipped cream to the cream cheese mixture.
  6. Fold with fruit such as banana & kiwi if desired.

Serves 8 -10.
