Muesli

Recipe courtesy of the Oat and Barley Council of Ontario.

Ingredients

  • 1/2 cup barley flakes
  • 2 cups large flake rolled oats
  • 1/4 cup flax seed
  • 1/4 cup oat bran
  • 3 cups boiling water
  • 1/4 cup raw, unsalted almonds (coarsley chopped)
  • 1/4 cup raisins
  • 2 Tbsp orange juice
  • 1/4 cup agave nectar or honey
  • 1 cup plain, non fat yogurt
  • 1/2 teaspoon cinnamon
  • 1 large apple (cleaned and grated)

Directions

  1. Place barley, oatmeal, flax seed, wheat germ and oat bran in a medium sized bowl.
  2. Mix well to combine.
  3. Pour boiling water over all and let sit overnight or until water is completely absorbed.
  4. Meanwhile, in another bowl, measure remaining ingredients.
  5. Mix well to combine.
  6. Add wet ingredients to fruit mixture and mox well.
  7. Serve immediately or refrigerate.

Muesli keeps well and lasts for about four days.
