Barley Pilaf

Ingredients

  • 1 cup pearl barley
  • 3 cups chicken or beef stock

Directions

  1. Mix broth and seasonings
  2. Simmer 45 minutes or until tender

Salt to taste

Variations:Add shredded carrots and green pepper in the last few minutes of cooking. Serve with entree. If serving with pork or poultry chop 1 small apple, 1 small onion and a stalk of celery and add to the pilaf in the last five minutes of cooking. Season with thyme or sage.
