Sweet and Sour Chicken with Barley

Ingredients

  • 1 chicken, cut up
  • 2 Tbsp canola oil
  • 1 onion
  • 2 celery stalks1 red pepper
  • 1/4 cup white or rice vinegar
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 Tbsp cornstarch
  • 1 cup pot barley
  • 2 cups chicken broth14 oz canned pineapple, rings or chunks

Directions

  1. Heat oil in a heavy skillet and brown the chicken pieces.
  2. Chop onion, celery and red pepper into medium chunks.
  3. Remove chicken and saut vegetables in skillet for a couple of minutes.
  4. In a medium saucepan, combine vinegar, sugar, soy sauce and cornstarch and bring to a boil.
  5. Add barley, chicken broth and juice from pineapple and again bring to a boil and cook for 3 minutes.
  6. Remove from heat and stir in vegetables and pineapple.
  7. Place chicken in a large caserole dish and pour sauce on top.
  8. Cover and bake in a 350F (180C) oven for about 1 1/2 hours.
