Slow Cooker Chicken Barley Chili

Ingredients

1 pound boneless, skinless check breast halves or thighs, cut into 1/2 inch pieces

1 can pinto beans, rinsed and drained

1 can corn
-
1 cup pearled barley
-
1-2 tbsp chili powder, to taste

1 tsp ground cumin
-
6 cups water
-
1 can diced tomatoes, undrained
-
1 jar mild or medium store brand salsa

Salt and freshly ground pepper to taste
Directions

Combine all ingredients in the slow cooker.

Stir to combine.

Cover and cook on low for 6-8 hours or on high for 4-6 hours.

Taste and season with salt and pepper, as needed.
