Barley Buttermilk Pancakes

Ingredients

  • 1 egg
  • 1/3 cup sour cream or yogurt
  • 1/3 cup buttermilk
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1 cup whole barley flour

Directions

  1. Beat the egg with the sour cream and buttermilk. 
  2. Sift the dry ingredients. 
  3. Stir in egg mixture and let stand 5 minutes. 
  4. Ladle onto a hot, oiled nonstick skillet. 
  5. Flip pancakes to lightly brown each side. 
  6. Serve with desired topping.
