Quick Barley Raisin Cookies

Ingredients

  • 1 cup butter or margarine
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1 tsp vanilla
  • 1 egg
  • 2 cups barley flakes or rolled or quick oats
  • 1 3/4 cups whole barley flour
  • 1 cup raisins
  • 3 Tbsp water

Directions

  1. Cream together butter, sugars, soda, salt, spices and vanilla, then beat in egg. 
  2. Stir in remaining ingredients. 
  3. These cookies spread a bit during baking, so space dough two inches apart on a greased cookie sheet. 
  4. Bake for 10 to 12 minutes in a 350F (180C) oven. 

Makes about three dozen cookies.
