Quick Barley Raisin Cookies
Ingredients

1 cup butter or margarine

1 cup brown sugar

1/2 cup white sugar

1 tsp baking soda

1 tsp salt

1 tsp cinnamon

1/2 tsp ginger
-
1/4 tsp nutmeg

1 tsp vanilla
-
1 egg
-
2 cups barley flakes or rolled or quick oats

1 3/4 cups whole barley flour

1 cup raisins
-
3 Tbsp water
Directions

Cream together butter, sugars, soda, salt, spices and vanilla, then beat in egg.

Stir in remaining ingredients.

These cookies spread a bit during baking, so space dough two inches apart on a greased cookie sheet.

Bake for 10 to 12 minutes in a 350F (180C) oven.
Makes about three dozen cookies.
