Great Pumpkin Cookies
Ingredients
- 2 cups whole barley flour
- 1 cup quick oats
- 1 tsp soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 cup butter or margarine, soften
- 1 cup packed brown sugar
- 1 egg, slightly beaten
- 1 tsp vanilla
- 1 cup pumpkin (canned or fresh)
- 1 cup chocolate chips, or orange flavored chips
Directions
- Combine flour, oats, soda, cinnamon and salt. In a separate bowl, cream margarine.
- Add sugars gradually, beating until light and fluffy.
- Add egg and vanilla, mix well.
- Alternate additions of dry ingredients and pumpkin, mixing well after each addition.
- Stir in chips and raisins.
- Drop heaping teaspoons on lightly greased cookie sheet.
- Bake for about 12 minutes at 375F (190C).
- Remove from sheets, cool on rack.
Makes about 4 dozen.
