Great Pumpkin Cookies


Ingredients

  • 2 cups whole barley flour
  • 1 cup quick oats
  • 1 tsp soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup butter or margarine, soften
  • 1 cup packed brown sugar
  • 1 egg, slightly beaten
  • 1 tsp vanilla
  • 1 cup pumpkin (canned or fresh)
  • 1 cup chocolate chips, or orange flavored chips

Directions

  1. Combine flour, oats, soda, cinnamon and salt. In a separate bowl, cream margarine. 
  2. Add sugars gradually, beating until light and fluffy. 
  3. Add egg and vanilla, mix well. 
  4. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. 
  5. Stir in chips and raisins. 
  6. Drop heaping teaspoons on lightly greased cookie sheet. 
  7. Bake for about 12 minutes at 375F (190C). 
  8. Remove from sheets, cool on rack. 
Makes about 4 dozen.
