Barley Drop Cookies
Ingredients
- 2 cups barley flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2/3 cup canola oil or 1 cup unsweetened applesauce
- 1 cup brown sugar
- 2 tbsp milk or water
- 1/2 tsp vanilla
- 2 eggs
- 1 1/2 cups dried fruit or nuts or a combination
Directions
- In a small bowl combine the flour, baking powder, baking soda and salt.
- In a medium-sized bowl stir together the oil (or applesauce), sugar, milk and vanilla, then add the beaten eggs and mix well.
- Stir in the dry ingredients and the dried fruit and nuts. Drop by spoonfuls onto a baking sheet.
- Bake at 375F (190C) for about 10 minutes.
Makes approximately 30 delicious cookies.
