Cranberry Orange Loaf

Ingredients

  • 1 cup whole barley flour
  • 1 cup all purpose flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1/4 cup shortening or margarine
  • 2 eggs, beaten
  • 3/4 cup orange juice
  • 1 Tbsp grated orange rind
  • 1 cup cranberries
  • 1/2 cup glazed green cherries
  • 1 Tbsp all-purpose flour

Directions

  1. Combine flours, sugar, baking powder, salt, baking soda
  2. Cut in shortening until mixture resembles coarse cornmeal
  3. Combine beaten eggs, orange juice, rind; pour all at once into dry ingredients, mix enough to dampen.
  4. Coarsely chop berries and cherries and dust with flour
  5. Fold into batter
  6. Pour into well-greased 9" x 5" (23 x 13cm) loaf pan
  7. Bake at 350F (180C) for 55 to 60 minutes or until toothpick inserted in centre comes out clean
  8. Cool in pan 10 minutes, remove, and cool on rack

When loaf is completely cooled, wrap in aluminum foil, and store overnight for easy slicing.
