Banana Loaf

Ingredients

  • 1/2 cup butter
  • 3/4 cup sugar
  • 3 ripe, medium bananas
  • 2 eggs
  • 1/4 cup buttermilk
  • 2 cups whole barley flour
  • 4 tsp baking powder
  • 1/4 tsp nutmeg
  • 1/2 cup chopped walnuts

Directions

  1. In a medium bowl, cream together butter and sugar. 
  2. Mash the bananas and stir in. 
  3. Beat in eggs one at a time and stir in buttermilk. 
  4. In a separate bowl, stir in flour, baking powder, nutmeg and nuts. 
  5. Stir liquid ingredients into dry ingredients, and pour into greased loaf pan. 
  6. Bake at 350F (180C) for one hour or until an inserted toothpick comes out clean.
